Tomato and Feta Salad

Difficulty: Easy


3 tbsp avocado oil

2 tbsp sherry vinegar

1tsp caster sugar

1/2 red onion, thinly sliced

6 Lycoplus tomatoes, thinly sliced

100g feta crumbled

100g selection of lives, pitted

Fresh herbs of your choice, torn

Good loaf of crusty bread to serve


Whisk the olive oil, vinegar, and sugar together. Stir in the onion and season. Place the tomato slices on 2 plates then divide the dressing and onion between them.

Leave to sit for 10 minutes then top with feta, olive, and fresh herbs. Serve with torn bread.
