Six small truss tomatoes
One red capsicum
One celery stalk
A large handful of fresh basil leaves
One tablespoon of olive oil
Two teaspoons of dried mixed herbs
One tablespoon of apple cider vinegar or juice from a lime
Salt and pepper to taste
Get ready for a tasty veggie sauce! Begin by chopping the celery into fine slices, quartering the tomatoes, and de-seeding and chopping the red capsicum into bite-sized pieces.
Next, add all the chopped veggies along with basil leaves to a saucepan. Pour in some olive oil, dried herbs, salt, and pepper, and put a lid on the pan. Let everything simmer for about 20 minutes until everything is nice and soft.
Once everything is cooked, add some apple cider vinegar, and transfer everything to a blender. Blend it all up for a minute or so until a smooth sauce forms. And that's it - a delicious, healthy, and homemade veggie sauce ready to enjoy!
