NZ Hothouse Tomato Sauce

  • Six small truss tomatoes

  • One red capsicum

  • One celery stalk

  • A large handful of fresh basil leaves

  • One tablespoon of olive oil

  • Two teaspoons of dried mixed herbs

  • One tablespoon of apple cider vinegar or juice from a lime

  • Salt and pepper to taste


Get ready for a tasty veggie sauce! Begin by chopping the celery into fine slices, quartering the tomatoes, and de-seeding and chopping the red capsicum into bite-sized pieces.

Next, add all the chopped veggies along with basil leaves to a saucepan. Pour in some olive oil, dried herbs, salt, and pepper, and put a lid on the pan. Let everything simmer for about 20 minutes until everything is nice and soft.
